Chinese Food Recipe Stir-fried Tofu With Mushrooms

Chinese Food Recipe Ingredients:
  • 3/4 pound firm tofu
  • 1 cup dried black mushrooms (dried shiitake mushrooms), or fresh mushrooms
  • 1 cup canned bamboo shoots
  • 2 tablespoons dark soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1 1/2 tablespoons Chinese rice wine or dry sherry
  • 2 tablespoons oil
Chinese Food Recipe Preparation:
Remove the tofu from the package and drain. Cut the tofu lengthwise through the middle, so that you have two equal pieces about 1-inch thick. Cut into large cubes.
If using dried mushrooms, reconstitute by soaking in warm water for 20 minutes or until they have softened. Squeeze to remove excess liquid and thinly slice. If using fresh mushrooms, wipe with a damp cloth and slice.
Rinse the bamboo shoots in warm running water and drain. In a small bowl, mix together the dark soy, oyster sauce, sugar, and Chinese rice wine or dry sherry and set aside.
Heat the wok. When the wok is ready, add the oil. Add the bamboo shoots and mushrooms and stir until they are heated through. Add the tofu and the dark soy/oyster sauce/sugar/sherry mixture. Stir-fry until the ingredients are heated through. Serve hot.

Chinese Food Recipe : Sweet and Sour Chicken


Chinese Food Recipe Ingredients:
  • 4 tbsps Peanut oil, divided
  • 1 lb. chicken breast, sliced thinly
  • 1 c. sliced celery
  • 1 c. Chinese cabbage, chopped
  • 1 med. onion, diced
  • 1-2 carrots, shredded
  • 1 red, yellow or green pepper, diced
  • 1/2 tsp. grated fresh ginger or 1/4 tsp. dried ginger
  • 1 clove garlic, minced
Sauce:
  • 1/3 c. rice wine vinegar
  • 1/2 c. brown sugar
  • Salt, pepper to taste
  • 1/4 tsp. dried ginger
  • 1/2 c. ketchup
  • Pinch of garlic powder
  • 1 c. chicken stock
  • 2 tbsp. cornstarch

Chinese Food Recipe Directions:

Have all ingredients chopped and ready to go.
In a deep skillet or wok, heat 2 tbsps. oil over high heat.
Add all vegetables. Stir-fry quickly until onion is cooked and translucent. Remove to bowl.
Add 2 tbsps. oil to wok; heat. Add chicken and stir fry until no longer pink on outside (5-7 minutes).
Mix in separate bowl sauce ingredients, making sure to mix cornstarch thoroughly.
To chicken in wok, add vegetables and sauce mix. Cook over low heat until cornstarch is cooked, about 7 minutes, or until sauce is slightly thickened.
Serve over hot cooked white rice.

Chinese Food Recipe Ingredients:
  • 1 loaf of Bean curd , fried and cut into cubes
  • 1 small can of tausi ( fermented, salted, black beans )
  • 200 gms (7 ounces) Chinese broccoli
  • 1-2 kg of pork, cut into cubes
  • crushed garlic, to taste
  • chopped onions, to taste
  • Seasonings, Add to taste:
  • oyster sauce
  • Chinese light soy sauce
  • Salt and pepper
Chinese Food Recipe Instructions:
Heat the pan with cooking oil.
Add the crushed garlic and onions.
Add the pork cubes. Allow to cook until the pork golden brown.
Add the fried bean curd and tausi. Season with the oyster sauce, soy sauce, salt and pepper.
Add the Chinese broccoli last. Mix through and serve...enjoy !

Chinese Food Recipe : Spring Rolls


Chinese Food Recipe Ingredients:

  • 8 spring roll skins
  • 2 oz. thinly sliced pork, cut into thin strips
Mixture A:
  • 1 tsp Chinese rice wine or sherry
  • 1 tsp coy sauce and cornstarch
  • A few grain of pepper
  • 2 dried large Chinese mushrooms, soaked in water and drained. Cut into strips.
  • 2 ½ oz. boiled bamboo shoots, cut into strips
  • 2 cabbage leaves, cut into strips
  • ½ tsp salt
  • Flour-and-water paste
  • Oil for deep frying plus 3 tbsp more oil

Chinese Food Recipe Directions:

Combine the pork and Mixture A. Let sit for 15 minutes.
Heat 3 tbsp of the oil in a wok, and stir-fry the pork briefly. Remove.
Heat the remaining 1 tbsp oil and add the salt. Stir fry the vegetables, then mix in the pork. Turn off the heat and let the filling cool thoroughly.
Place some of the filling a little above the center of each spring roll skin. Fold the upper edge over the filling, turn in the 2 sides, and roll it down to the bottom. Brush the bottom edge with the flour-and-water paste to seal it thoroughly.
Heat the deep-frying oil over moderate heat. Deep-fry the spring rolls until golden. Turn them frequently. Serve immediately with table seasonings...Enjoy the Chinese food !

Chinese Food Recipe : Kung Pao Chicken


Chinese Food Recipe Ingredients:
  • 3/4 lb. chicken, boned and skinned
  • 2 tbsps. oyster sauce
  • 2 1/2 tbsps. cooking oil
  • 8 small dried red chilies
  • 4 tsps. minced garlic
  • 2 stalks celery, diced
  • 1/2 red bell pepper, cut into 1−inch squares
  • 1 can (8 oz.) bamboo shoots, sliced and drained
  • 2 tsp. cornstarch dissolved in 1 tablespoon water
  • 1 tsp. cornstarch
  • 1/3 cup roasted peanuts
Sauce:
  • 3 tbsps. Chinese rice wine or dry sherry
  • 1/4 cup Chinese black vinegar or balsamic vinegar
  • 1/4 cup chicken broth
  • 1 tbsp. soy sauce
  • 2 tbsps. hoisin sauce
  • 2 tsp. sesame oil
  • 2 tsps. chili garlic sauce
  • 2 tsps. sugar
Chinese Food Recipe Directions:

Cut chicken into 1−inch pieces. Marinade chicken with oyster sauce in a bowl and let stand for 10 minutes.
Combine sauce ingredients in a bowl.
Place a wok over high heat until hot. Add 2 tablespoons oil, swirling to coat sides. Add chilies and cook, stirring, until fragrant, about 10 seconds.
Add chicken and stir fry for 2 minutes. Remove chicken and chilies from wok.
Add remaining 1/2 tablespoon oil to wok, swirling to coat sides. Add garlic and cook, stirring, until fragrant, about 10 seconds. Add celery, bell pepper, and bamboo shoots; stir fry for 1 1/2 minutes.
Return chicken and chilies to wok; stir fry for 1 minute. Add sauce and bring to a boil. Add cornstarch solution and cook, stirring, until sauce boils and thickens. Add peanuts and stir to coat.

Chinese Marinated Tofu Recipe With Spinach

Chinese Recipe Ingredients:
  • 6 ounces firm tofu, cut into 1/2-inch cubes
  • 6 tablespoons dark soy sauce
  • 3 tablespoons Chinese rice wine or dry sherry
  • 3/4 teaspoon plus 1/4 teaspoon sugar
  • 1 teaspoon plus 1 teaspoon minced garlic (or according to taste)
  • 1/4 teaspoon plus 1/4 teaspoon chile paste (or according to taste)
  • 10 ounces fresh spinach, washed and drained
  • 1/2 teaspoon salt, or according to taste
  • 1/4 teaspoon Asian sesame oil
  • 3 tablespoons peanut or vegetable oil for stir-frying
Chinese Recipe Instructions:
Combine the marinade ingredients for the tofu (6 tablespoons dark soy sauce, 3 tablespoons rice wine or sherry, 3/4 teaspoon sugar, 1 teaspoon minced garlic plus 1/4 teaspoon chili paste - in a small bowl. Place the tofu cubes in a resealable plastic bag. Pour in the marinade ingredients. Marinate the tofu in the refrigerator for at least 2 hours, turning occasionally. Remove the tofu and discard the excess marinade.

Preheat the wok and add 1 tablespoon oil, tilting the wok so that the oil comes partway up the sides of the wok. When the oil is hot, add the tofu cubes. Stir-fry about 3 to 4 minutes, until browned on the outside. Remove and wipe out the wok.

Have all the ingredients for stir-frying the spinach at hand near the stove. Heat 2 tablespoons oil in the wok, again swirling so that it comes about halfway up the sides of the wok. When the oil is hot, add 1 teaspoon minced garlic, 1/4 teaspoon chili paste, and the salt. Stir for a few seconds until the garlic is aromatic.

Add the spinach, stir for 1 to 2 minutes, until the leaves are almost wilted. Stir in the 1/4 teaspoon sugar and Asian sesame oil. (Note: if you don't already have the sugar and sesame oil measured out, move the wok to a cold burner while you do so, and then return it to the heated burner). Sprinkle the spinach with a bit of black pepper if desired. Add the tofu back into the pan and stir to combine with the spinach. Serve immediately...enjoy it !

  • 1 tablespoon almonds
  • 1 tablespoon peanut oil
  • 2 beaten eggs
  • Tiny pinch each salt, sugar and Ve-Tsin (Monosodium glutamate )

Cut the almonds into slivers or roughly chop them. Heat the oil in frying-pan. Add the eggs and stir them so rapidly that they are at once mixed.
As quickly as possible add the three seasonings and the almonds and spread them out.
Roll the omelet and turn it on to a warm oval plate - not a hot one because the omelet would go on cooking and become hard.
